Traveling is exciting in itself, as much because of getting to know new cultures and landscapes as it is because of the new tastes you will try.

If you like to try the classic and authentic food of the countries you travel to, what most people traveling to Greece should not miss is the traditional pasticio.

I tried pasticio for the first time ten years ago in an ordinary family restaurant on Zakynthos, and I liked it at first bite. I made it several times at home in my own modified version because some ingredients are hard to find here, but regardless of the modifications, it was excellent.

Pasticio is a simple food, layered pasta with meat, cheese, and béchamel sauce, served for a family lunch. It is best when stewed for about three hours and served a day later.

Cinnamon is added to minced beef stewed in tomato sauce, giving this dish a special aroma. The dish is prepared from a special type of noodles that looks like spaghetti but are much thicker and have a hole in the middle. The main asset of this specialty is a special type of cheese - Kaseri. This traditional Greek cheese is made from unpasteurized sheep's and goat's milk that needs to mature for at least four months to achieve its specific texture and aroma.

Just one bite of this cheese will enrich your mouth with exciting salty flavors and a special aroma, and on the other hand, leave behind a sweet taste.

Line up a row of noodles, a row of cheese, a row of sauce, and so on until the prepared mixture is used up, and end it with a layer of béchamel. On the top of the dish, there is poured melted butter and sprinkled kasseri cheese.

The dish is simple but has an extremely rich taste, so you won't go wrong if you decide to prepare it and invite your friends to enjoy it together and retell the experiences from your trip to Greece.

 Retsina - a Greek wine with a long tradition which is mainly produced from Savatiano, a not very well-known grape variety characterized by an extremely high percentage of sugar in the grape seed.
